A Duo of Wild Pacific Halibut

 

FRIED WILD PACIFIC HALIBUT WITH SPICY SALT

INGREDIENTS

  • 600 g - Wild Pacific Halibut fillet

  • 1 - egg yolk

  • 1 cup - flour

  • canola oil for frying – enough to fill a deep large skillet to 2 inches

  • 1 - red pepper, diced

  • 1 - green onion, chopped

  • 2 Tbsp - minced garlic

Marinade

  • 1 tsp - salt

  • 1 tsp - sugar

  • 1 Tbsp - cooking wine

In a medium sized bowl, mix all marinade ingredients together well.

Seasoning

1 tsp - salt

1 tsp - sugar

1 tsp - ginger spice powder

In a small bowl, mix all seasoning ingredients together well.

DIRECTIONS

  1. Cut the Wild Pacific Halibut into about 3 inch pieces, mix well with marinade and set aside for at least 30 minutes.

  2. Mix 1 egg yolk into the marinated wild Pacific halibut, then dredge each piece of fish in flour to completely coat.

  3. Heat oil in a deep large skillet over medium heat, slightly coat wild Pacific halibut with flour the second time, place into the heated oil immediately.

  4. Turn the heat to low after adding in all the wild Pacific halibut pieces, deep fry until both sides become crispy, about 4 minutes. Remove the wild Pacific halibut from heat and drain in a colander set over a bowl.

  5. Add 1 teaspoon oil in another frying pan over high heat, stir fry the red pepper, green onion, garlic and seasoning mixture until the aroma is released, add in the fried wild Pacific halibut and slightly mix together. Serve hot.

Serves 8 as small plates.

SALTED EGG WILD PACIFIC HALIBUT

INGREDIENTS

  • 600 g - Wild Pacific Halibut fillet

  • 5 - salted duck egg yolks

  • 2 tsp - canola oil

  • ½ tsp - sugar

  • 1 ½ Tbsp - butter

  • 1 - egg yolk

  • 1 cup - flour

  • canola oil for frying – enough to fill a deep large skillet to at least 2 inches

Marinade

  • 1 tsp - salt

  • 1 tsp - sugar

  • 1 Tbsp - cooking wine

In a medium sized bowl, mix all marinade ingredients together well.

DIRECTIONS

  1. Bake the salted duck egg yolks in the oven at 475°F for 10 minutes. Mash well.

  2. Melt butter together with canola oil and sugar.

  3. Combined the butter mixture with the mashed egg yolk. Set aside.

  4. Cut the Wild Pacific Halibut into about 3 inches pieces, mix well with marinade and set aside for at least 30 minutes.

  5. Mix the one egg yolk into the marinated wild Pacific halibut, then dredge each piece of fish in flour to completely coat.

  6. Heat oil in a deep large skillet over medium heat, slightly coat wild Pacific halibut with flour the second time, place into the heated oil immediately.
